Description
The vines come from a massal selection planted free-standing, without rootstock. This is made possible by the plot’s sandy soil composition, which does not allow phylloxera to dig its galleries. The vines are planted in grass, perpendicular to the slope and facing south-east. The soils are poor, with few nutrients, a pH of 6.7 and a total absence of limestone. In vinification, we keep a maximum of 35% whole bunches; the rest is destemmed and not crushed, vinified with spontaneous yeasts. Vatting lasts about three weeks. The wine is aged 50% in Wine Globe and the balance in used barrels.
